Overview

Flash brewing means brewing hot directly onto ice. The ice becomes part of the recipe rather than diluting a finished cup.

You keep all the aromatics of a hot brew while locking them in instantly as the coffee chills.

What You Need

  • Dripper and filter
  • Scale
  • Ice
  • Carafe or sturdy glass

Step-by-Step Instructions

  1. 1

    Weigh the ice

Put 4.6 oz of ice in the carafe — this counts toward your water total.

  2. 2

    Brew onto it

Brew 0.7 oz of coffee with 6.7 oz of hot water by weight straight over the ice.

  3. 3

    Swirl and serve

Swirl until the ice melts, then pour over fresh ice.

Common Mistakes

  • Forgetting the ice counts as water
  • Using too coarse a grind

How to Improve the Flavour

  • Fruity light roasts shine here.
  • Add a splash of milk only after tasting it black.

Frequently Asked Questions

Is flash brew better than cold brew?+

It is different — brighter and more aromatic, but less sweet and heavier on acidity. Cold brew is smoother.
