Freshly roasted coffee beans spilling from a bag

Roasted coffee releases carbon dioxide for days. Too fresh and brewing is chaotic; too old and the aroma is gone.

The sweet spot

Filter coffee is usually best from about 5 to 25 days after roasting. Espresso often needs 7 to 14 days of rest to stabilise.

Signs coffee is past it

Flat aroma when you open the bag, no bloom when you pour, and a papery finish in the cup.

Frequently Asked Questions

Does freezing coffee work?+

Freezing in airtight, single-use portions preserves coffee well. Repeated thawing does not.
